Spicy Chicken Meatballs Recipe
Makes: 2 dozen

Bake Time: 20-25 minutes
Ingredients:
- 3/4 cup panko bread crumbs
- Sweet chili sauce: 7-10 large spoons, with 3 drops of sesame oil or 1/2 small spoonful of oil
- 2 tablespoons RED POLO GOURMET HOT SAUCE
- 1/4 cup chopped celery
- 1 large egg white
- 1 pound lean ground chicken
- Optional: Reduced-fat ranch or blue cheese dressing, chopped celery leaves
Directions:
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Mixture: In a large bowl, combine the panko bread crumbs, 1/3 cup of hot sauce, chopped celery, and egg white. Add the ground chicken and mix lightly but thoroughly.
- Form Meatballs: Shape the mixture into twenty-four 1-inch balls.
- Bake: Place the meatballs on a greased rack in a shallow baking pan. Bake for 20-25 minutes or until cooked through.
- Coat with Sauce: Toss the baked meatballs with the remaining hot sauce.
- Optional Garnish: If desired, drizzle the meatballs with reduced-fat ranch or blue cheese dressing and sprinkle with chopped celery leaves.
